Spray-dried coffee powder is a type of instant coffee that is produced through a process called spray drying. It starts with freshly brewed coffee, which is then concentrated to form a liquid coffee extract. This extract is then sprayed into a hot chamber where it quickly evaporates, leaving behind tiny particles of coffee powder.
The spray drying process involves atomizing the liquid coffee extract into small droplets using high-pressure nozzles. These droplets are then exposed to hot air, which rapidly evaporates the liquid, resulting in the formation of fine coffee particles. The hot air used in the process is typically heated to temperatures around 200-300 degrees Celsius (392-572 degrees Fahrenheit).
The spray-drying method allows for the preservation of the coffee's aroma and flavor, making it a popular choice for instant coffee production. The resulting powder is soluble and dissolves easily in water, making it convenient for quick preparation.
Spray-dried coffee powder has a longer shelf life compared to other forms of coffee, such as ground or whole bean coffee, due to its low moisture content. It is also more lightweight and compact, making it easier to store and transport.
However, it's important to note that the spray drying process can cause some loss of volatile compounds, which can affect the overall flavor and aroma of the coffee. Additionally, the final product may not have the same complexity and depth of flavor as freshly brewed coffee.

 In freeze-drying, the coffee extract is frozen to about – 40°C and cut into granules. The frozen granules are then dried at low temperature and under vacuum. The quality of the aroma and flavour are protected by the very low temperature and gentle drying conditions.

Instant coffee is made from real coffee beans. The soluble and volatile contents of the beans are extracted. Then the water is removed so powder or concentrated soluble coffee powder are left over.
